Step 1. Boil the quinoa for 60 minutes.
Step 2. Line a baking tray with parchment paper and make a thick layer of quinoa over it to dry.
Step 3. Put the sweet potato for roasting over wood chips for good 30 minutes.
Step 4. Make a light vinaigrette of oil, lemon, tamarind paste, salt and pepper.
Step 5. Mix all the ingredients - sweet potato, pineapple, beetroot, and fried quinoa crisp in a bowl. Add the dressing.
Step 6. Serve in a bowl with some micro herbs over it.
