Our fitness routines and diet have all gone down the drain since this lockdown began. Being at home and working from home makes us all snacky. This means compromising on our health. Chef Anish from Malt & Co. has shared his recipe of Arugula, Citrus and Fennel Salad to make this quarantine healthy for you folks. Check it out:
Preparation Time - 7-8 Mins
Serves - 12 Portions

Instructions:
Step 1. Mix together the lime juice , orange juice , shallots , ginger and zest
Step 2. Whip in the olive oil to make a vinaigrette
Step 3. Add salt to taste
Step 4. Peel and section the grapefruit. You should have around 500gms Grapefruit sections.
Step 5. Cut the Fennel bulb in half vertically.Lay the halves on the cutting board , cut side down , and cut vertically into thin slices.
Step 6. Trim the stems from the Arugula , Tear into pieces.
Step 7. Just before serving , toss together the grapefruit , fennel , and arugula
Step 8. Mound on cold salad plates.
Step 9. Drizzle 1 tablespoon (15ml) vinaigrette over each portion.
