Radisson Blu’s Chef Pankaj Shares His Recipe of Subz Platinum Kebabs

Instructions:

Step 1. In a heavy bottom pan boil the potatoes

Step 2. Wash all vegetable, grate carrot and beetroot , chop broccoli and beans

Step 3. In a heavy bottom Kadhai add desi ghee to heat up, add Royal cumin, chopped ginger and green chili and sauté for a few minutes.

Step 4. Add grated carrot, beetroot, beans and broccoli and cook for a few minutes keeping in mind your vegetable should be crunchy

Step 5. Add mash potato and put salt and black pepper and check seasoning

Step 6. Let the mixture cool down, divide the mixture in round balls and flatten it with the help of both the palm and give it the shape of patty

Step 7. Grill the patty on a griddle

Step 8. Serve hot with mint chutney and classical salad
