Chef Sharad’s Exotic Holy Basil Prawn Curry with Gondhoraj Scented Rice

The lockdown has had many of us craving gourmet restaurant food. Our dinner dates and outings have all been put on hold. In such a scenario, we looped Chef Sharad Dewan, Regional Director - Food Production - The Park Hotel, Kolkata. He has given us his extremely yummilicious recipe of Holy Basil Prawn Curry with Gondhoraj Scented Rice to share with you. Scroll down and read:

Preparation Time - 30 Minutes

For The Lemon Rice:
Zest & Juice 1 Gondhoraj Lemon or any Lemon and 2 Cups Steamed Rice

For Prawn Curry:

  1. Marinate the Prawns in Salt & Lemon Juice.
  2. Heat the ghee & sauté the julienned ginger and green chillies.
  3. Sauté the marinated Prawns in this and deglaze with water.
  4. Add grated coconut & coconut milk.
  5. Add a little basil pesto and simmer gently.
  6. Check seasoning and adjust with a pinch of sugar.
  7. Garnish with basil leaves or red Chillies.
  8. Stir the lemon zest & juice into the steamed rice and serve with the curry.
