Step 1. Half-boil the duck eggs to keep the yolks soft.
Step 2. Fry the eggs in oil till golden brown.
Step 3. Crackle bay leaf in hot oil; add onions, garlic, ginger, tomatoes, salt, sugar, turmeric and red chilli powder; sauté until oil separates.
Step 4. Add a little water and make the gravy.
Step 5. Add the eggs to the gravy; it should coat the eggs.
Step 6. Garnish with slit green chillies and chopped coriander leaves.
