Soyabean ki Shami Kebabs are the Vegetarian’s Paradise

Traditionally, a “Shami” kebab is a small fried patty made of cooked, minced goat or lamb. But, this version featured here is the luscious vegetarian recipe by Chef Deepak Bisht, Executive Chef, Umrao Hotel, Delhi is for sure gonna take you to a spicy flavourful trip.

Preparation Time - 1 hour

Serves - 4 portions

Ingredients:

  1. 500gm Soyabean
  2. 150gm Chana Dal
  3. 2gm Cardamom
  4. 2gm Cinnamon
  5. 2gm Cloves
  6. 1gm Bay leaf
  7. 15gm chopped coriander leaves
  8. 15gm chopped mint leaves
  9. 15gm chopped green chillies
  10. 20gm chopped ginger
  11. 40gm Hung curd
  12. 2gm red chili
  13. 3gm javitri powder
  14. Salt to taste

Instructions:

Step 1. Boil soya bean and dal chana dal with salt, and whole spices

Step 2. Squeeze soybean properly and mince with chana dal.

Step 3. Add chopped ginger, green chillies, coriander, mint, salt, javitri, and cardamom powder.

Step 4. Roast ginger, green chilli, salt, begadi chilli and garam masala. Grind it into a paste.

Step 5. Make small and even sized tikki with the mixture

Step 6. Heat desi ghee in a pan and shallow fry the tikki’s

Step 7. Serve hot with hung curd dip.
