Step 1. Wash the fillet of fish thoroughly and pat dry to soak out any excess moisture.
Step 2. Marinate The fish with chopped garlic, salt, pepper, kaffir lime juice & parsley.
Step 3. Sprinkle a little flour and grill the fish in a hot plate.
Step 4. Once the outer surface is sealed, cover it with silver foil and put it in an oven for 5-7 mins.
Step 5. Saute onion, garlic, leek & celery in butter.
Step 6. Add the fish stock as per desired consistency of the sauce.
Step 7. Finish the sauce with a knob of butter, a dash of cream and finely chopped parsley.
Step 8. Prepare an olive-Mash, with boiled and mashed potatoes, folding it with chopped olives and finish with butter & cream.
Step 9. Take out the fish from the oven, place it on the olive mash, as shown in the picture.
Step 10. Drizzle a little olive oil and pour the sauce on top.
Step 11. Garnish as shown.
