Curried egg Croque is French Press Café’s take on a classic dish called the Croque Monsieur, which is basically a sandwich filled with ham and topped with gratinated gruyere cheese. Curried Egg Croque is filled with a creamy filling of boiled egg and topped with gratinated mozzarella cheese, vegetarians can go for alternative fillings like grilled bell peppers seasoned with pesto, creamy mushrooms, etc.

  • 50 gm plain flour(maida)
  • 50 gm butter
  • 500 ml of milk

Instructions:

  • Add butter in a pan and let it melt then add flour.
  • Toast it till it turns light brown in color and immediately add milk so that the roux doesn’t burn.
  • Keep whisking the mixture continuously so that lumps are not formed. Make sure that the burner is on medium heat otherwise the sauce will not thicken.
  • Keep on stirring and heating the mixture until it becomes of a thick consistency, pour the sauce in a bowl and let it cool.

Ingredients to make Curried Egg Croque:

  • Eggs - 2
  • Sliced bread (Jumbo bread or medium-sized bread, whole wheat bread can also be used)-2 nos.
  • Grated Mozzarella cheese (if you don’t prefer the texture of mozzarella you can mix in some cheddar to mozzarella or you can go for cheddar cheese altogether)
  • Mayonnaise (store-bought eggless or egg-based mayonnaise can be used, egg-based mayonnaise can also be made at home)
  • Salt- as per taste
  • Crushed black pepper – as per taste
  • Pizza spice mix (is available in most stores and is a mix of most of the herbs used in Italian cooking)- according to taste
  • Dijon mustard-1 tsp (English mustard or American Mustard can also be used)
  • Tabasco sauce -1tsp (chilli based sauce can also be used)
  • Cream- 20 ml

Instructions:

Step-1: Boil the eggs, boiling time is approximately 8-10 minutes if you want a hard-boiled egg. For soft boiled eggs, boil the eggs for 6 minutes.

Step-2: Once the eggs are boiled, strain them and pour cold water on them. Let them rest for a while then peel them and chop them in small cubes.

Step-3: For the egg filling, add around four big spoons of mayonnaise, Dijon mustard, tabasco sauce, cream, salt, crushed black pepper, pizza spice mix, and chopped eggs, mix them well.

Step-4: Take 2 slices of bread and toast them in a toaster. You can also use an OTG (oven toaster griller), take the bread slices, and fill them with the egg filling that was prepared before.

Step-5: Make sure that you don’t overfill the sandwich and then press the two loaves of bread gently. Spread the bechamel sauce on the top layer of bread evenly and also spread it on the sides, spread mozzarella all over the bread and then sprinkle pizza premix over it.

Step-6: Preheat your OTG oven to 250 degrees and select only the upper element of OTG to be turned on, gratinate (toast) the sandwich in the OTG until the cheese melts and also browns a bit, take the croquet out and cut it into two halves serve it with french fries and you are ready to enjoy it.
