Step 1. Heat the oil in a saucepan over medium.
Step 2. Add onion & cook stirring for 5-6 minutes.
Step 3. Add the carrots, ginger, broth, salt & pepper. Bring to a boil.
Step 4. Reduce the heat & simmer until carrots are soft. Cool this & make a smooth puree in a blender.
Step 5. Return to a pot, heat the soup & add the cream.
Step 6. Serve hot with garnishing.
